Big Mac Salad – Thrive Low Carb Way!

Does this ever happen to you?  I’ve been working around my house and time got away from me and I realized I was hungry. I’d seen a recipe for a Big Mac Salad from Our Abundant Blessings Blog and pinned it to one of my boards on Pinterest.  It sounded good but I didn’t have any hamburger thawed to make a burger – THRIVE to the rescue again — I love my Thrive Home Store!

Well, I’ve made up a new one for the Big Mac Salad,
the Thrive Low Carb Way! —

Thrive freeze dried beef, special sauce,
lettuce, cheese, pickles, onions
And don’t need that sesame seed bun!

So here’s you go — my Thrive version of the:

Thrive product numbers are for Pantry sized cans

Ingredients:

Special Sauce:
1/2 cup mayonnaise – I use this NON-GMO Brand, Just Mayo Original, if I don’t make it myself
2 Tablespoons my Sugar Free Sweet Fire Ketchup or any sugar-free ketchup
2 teaspoons yellow mustard
2 Tablespoons dill pickle relish

Salad:
Romaine lettuce
1/4 cup Thrive FD Ground Beef (#22564), reconstituted
2 Tablespoons Thrive FD Diced Tomatoes (#22241) or grape tomatoes cut in half
Dill pickles, chopped
1 Tablespoon Thrive FD Onions (#22227) or Onion, chopped
2 Tablespoons Thrive FD Cheddar Cheese (#22440), right out of the can! Adds a nice crunch!

Instructions:

Mix up the sauce.  (If you want to let the flavors blend, you can refrigerate up to an hour – I couldn’t wait so used it right away and it was delicious!)

Layer your salad ingredients in the order listed
Look at that wonderful ground beef and cheddar cheese.
This salad has the grape tomatoes cut up and
I love big pieces of onion so I cut one up!
However, both the Thrive Tomato Dices and Onions
are in my Home Store for a future salad!

Tomato PowderA few years ago, I tried making my own homemade sugar free ketchup. It didn’t turn out the way I hoped, and my husband never really liked it. My friend, Cindy Suelzle, made her own Best Ever Ketchup, using Thrive Tomato Powder*** (#22237) as the base and really raved about how good it turned out on her Thrive Blog. I’m on a new quest to greatly reduce the sugar in my life, as I continue to cook more nutritious meals with Thrive and lose some weight too. SO, I made another attempt at making a SUGAR FREE KETCHUP using Thrive. I used Cindy’s recipe as a base and then did my own tweaks to make it sugar free and kick it up. The result? My husband said it was the best I’ve made and he really liked it! WhooHoo — Success! I really liked it too.

So here’s my recipe for:

Thrivin’ Sugar Free Sweet Fire Ketchup!

FD – Freeze Dried
Product numbers after products are for Pantry Cans except Spice Cans

KetchupSFSweetFireNutriIngredients:

1 cup THRIVE Tomato Powder (#22237)
3 1/2 cups water
1/3 cup Stevia Sweet Blend** or other sugar free equivalent
1/2 cup Bragg’s Apple Cider Vinegar
2 Tablespoons THRIVE FD Chopped Onion (#22227)
2 Tablespoons THRIVE FD Celery (#22223)
1/2 teaspoon THRIVE Iodized Salt (#22668)
1/2 teaspoon THRIVE Chef’s Choice Seasoning (#23628)
1/4 teaspoon THRIVE Peppercorn Blend (#23629)
1/4 teaspoon Cayenne Pepper, optional (but it makes the Fire)
1/2 teaspoon Minced Garlic or Garlic Powder
1/2 teaspoon THRIVE Baking Soda (#22661)
1/2 teaspoon Dry Mustard
1/8 teaspoon Allspice, ground or powdered
1/4 teaspoon Cinnamon

Directions:
In a medium sized pot combine all the ingredients. Stir with a wooden spoon to mix and bring to a boil, stirring frequently. Reduce heat and gently simmer, stirring frequently till ketchup reaches the perfect consistency for you. Blend until smooth if FD onions & celery too chunky for you.

Pour into glass jars, cool and refrigerate.
Yields: 2 pint jars.
Serving Size: 1 Tablespoon or 32 servings/jar (64 servings for the recipe)

**Stevia Sweet Blend:
1 cup GMO-free Erythritol
1 teaspoon Organic Pure Stevia

Sausage Cheese PopUms – Under 30 minutes!

Sausage Cheese PopUmsI played around with 3 Thrive Ingredients and created this Sausage Cheese PopUm Recipe. These Sausage Cheese PopUms are great as an appetizer or snack but area also a great breakfast with maple syrup on them! They freeze well or keep in the fridge for several days. So you can make them up ahead of time to have a quick and easy breakfast or snack anytime you want!

Ingredients:

1 cup Thrive FD Sausage Crumbles (#22568)
1 cup hot water
1 cup Thrive 10 Grain Pancake Mix (#22131)
3 Tablespoons butter, soften
1 cup Thrive FD Cheddar Cheese (#22440)

Directions:

– Pre heat Oven to 350 degrees.
– Put Thrive FD Sausage Crumbles into small mixing bowl. Add hot water, stir and let sit 10 minutes.
– Put Thrive 10 Grain Pancake Mix into medium mixing bowl. Cut in soften butter until crumbly.
– Add Thrive FD Cheddar Cheese and mix to coat cheese with buttered pancake mix.
Sausage Soaking– Add sausage AND the water to the pancake mix and gently stir until moistened.
– Scoop into Mini Muffin Pan that has been sprayed with Butter Spray.
Sausage Cheese-Ready2Bake–  Bake 18-22 minutes until golden brown and done in the middle.

Kay’s Bolognese Sauce – 20 Minute Meal

You can have our Family Favorite Bolognese Sauce to put on it –
Yes that is correct –
In less than 20 minutes Dinner Is Ready!

How this recipe was born

I’ve always “doctored” recipes, even before “Thrivealizing” recipes.  It always drove my friends nuts that it was hard to give them an actual recipe as I would throw in a little of this and a little of that.  Anyway, for years my husband was a “Ragu” man when it came to spaghetti saThrive Tomato Sauceuce — of course I doctored it up too, but the base had to be Ragu. Then last year Thrive introduced their new Sauce and Seasoning lines and a new sauce was born from the Thrive Tomato Sauce.  It started with the recipe that is printed on the can and I even Thrivealized that to make my own version.

A Different “Pasta” Variation

Norpor MandolineThere are many uses for this rich sauce and pasta isn’t the only thing you can put it on.  With summer coming on and my summer squash will be ready soon, I experimented with making zucchini and yellow squash pasta, using my mandoline.

What is a mandoline? Mine is a Norpro Deluxe Mandoline Slicer/Grater.  I originally got it so I could slice onions really thin to make my cousin’s french onion soup (another recipe, another post 🙂

Summer Squash PastaI made the first zucchini noodles a little bigger than I wanted for my “spaghetti” noodles so I just sautéed them in a little coconut oil, garlic and an Oriental Spice seasoning I had. That was my lunch and it was delicious.  I then put the correct attachment onto my mandoline and got the size “noodles” I wanted.  My summer squash “noodles looked like this: ————————————->

I blanched them in boiling salted water for 3 minutes, then let them drain well while I made the sauce.

Now for the sauce.

Kay's Bolognese Sauce NutritionIngredients:

1⁄2 cup Thrive FD Ground Beef (#22564)
1/2 cup Thrive FD Sausage Crumbles (#22568)
2 Tablespoons butter
1 Tablespoon minced garlic
2 teaspoon fennel seeds (optional-my secret ingredient)
1/2 cup red wine (optional)**
2 Tablespoons Thrive Carrot Dices (#22221)
2 Tablespoons Thrive Mixed Bell Peppers (#22235)
1/4 cup Thrive FD Chopped Onions (#22227)
1/4 cup Thrive FD Celery (#22223)
1/4 cup Thrive FD Spinach (#22234)
2 Tablespoons Thrive Tomato Powder (#22237)
1/2 teaspoon Thrive Baking Soda (#22661)
2 tiny scoops Stevia or a little sweetener to taste
1 1/2 teaspoons Thrive FD Italian Seasoning Blend (#23627)
1⁄2 teaspoon Thrive Chef’s Choice Seasoning blend (#23628)
1⁄2 cup Thrive Tomato Sauce, (#22604), dry
4 cups water
Thrive FD Shredded Mozzarella Cheese (#22443), right out of the can as garnish if desired.

Instructions:

Measure out all ingredients. Reconstitute ground beef and sausage by soaking in ½ cup hot water about 5 minutes. Do not drain. Sauté garlic and fennel in butter until softened. Deglaze with red wine and reduce by half. Add carrots, mixed peppers, onions, celery, and meat and reduce until syrupy. Add remaining ingredients and bring to a simmer. Simmer on low for 8–10 minutes. Serve over pasta or veggie “pasta”. Garnish with Thrive Mozzarella Cheese right out of the can. Serves 8

Alcohol Free Cooking Tips that Taste Gourmet

No AlcoholWould you like to cook like a Gourmet Chef without using alcohol as an ingredient?

Why would you want to? The alcohol cooks out and just leaves the flavor behind!

Maybe you just don’t want alcohol in your home for:

  • Health reasons?
  • Religious reasons?
  • Financial reasons?

Well, here you go — Listed below are a few substitutions to get you started:

Amaretto – Almond extract (1/2 teaspoon extract for 2 tablespoons of Amaretto) or Amaretto syrup such as Davinci Gourmet, Coffee Syrup Sf Amaretto, 25.4-Ounce

Beer or Ale – A strong chicken, beef or mushroom broth, or non-alcoholic beer.

Beer or Ale (Light) – Chicken broth, white grape juice or ginger ale.

Red Burgundy – Red wine vinegar, grape juice or non-alcoholic wine

Red Wine, sweet or dry – non-alcoholic wine with a tablespoon of vinegar added to cut the sweetness, grape juice, cranberry juice, grape jelly, tomato juice, beef broth, liquid drained from vegetables, or water. Use equal amounts of liquid as called for in the recipe.

Rum – White grape juice, pineapple juice, or apple juice in equal liquid amounts as called for in the recipe. Can also use these juices with 1/2 to 1 teaspoon of rum, almond or vanilla extract added.

Sherry – Apple juice, orange juice, pineapple juice, or non-alcoholic vanilla extract.

Vodka – White grape juice or apple cider combined with lime juice or use plain water in place of the vodka.

White Burgundy – non-alcoholic wine, white grape juice combined with white wine vinegar.

White Wine, sweet or dry – non-alcoholic wine with a tablespoon of vinegar added to cut the sweetness, white grape juice, apple juice, apple cider, tomato juice, chicken broth, liquid drained from vegetables, ginger ale, or water. Use equal amounts of liquid as called for in the recipe.

Cooking with Essential Oils

doTerraCookingI’ve been using Essential Oils for a couple of years for more health related things. I’m just starting to explore the world of cooking with Essential Oils. My friend and fellow Thrive Consultant, Nancy Barter, a.k.a. Self Reliant Mama, has done a few You Tube Videos as she has experimented with cooking with Essential Oils. Here’s one:

Not all Essential Oils are meant to be taken internally and you want to make sure that you are using Food Grade essential oils. I choose doTerra oils because of the superior quality.

SIX TIPS for cooking with Essential Oils

1. A LITTLE GOES A LONG WAY – Essential Oils are more potent than dried or fresh herbs, i.e., One drop of peppermint oil equals about 28 cups of peppermint tea. Always start off with a SINGLE drop so as not to waste the essential oils. You can always add more.
2. “TOOTHPICK METHOD” – If recipe calls for less than teaspoon of herb/spice/flavoring, DIP a toothpick in the center of the dripper cap and then swirl the toothpick in the recipe or beverage.
3. CITRUS ZEST of “one” lemon, orange or tangerine = 8 to 14 drops of its companion EO
4. SPICY HERBS (marjoram, oregano, sage, rosemary, thyme or coriander) conversion: One Tablespoon spicy herb = 1/2 to ‘one’ drop of doTerra EO. Best to use the “Toothpick Method”
5. “HOT OILS” – ALWAYS use the “TOOTHPICK METHOD” for Cinnamon, Clove, Ginger and Oregano oils because doTerra oils are much stronger than their companion spices.
6. WHEN TO ADD THE ESSENTIAL OIL TO RECIPE – Add the essential oil right before serving. The heat will evaporate essential oils with the steam. With a few oils that are too strong – such as basil, oregano and rosemary – simmering will produce a wonderfully subtle scent.

Cucumber Salsa – Garden Harvest Enhanced with Thrive

I’m starting to harvest from my small garden – How about you? We’ve got cucumbers, tomatoes, squash and raspberries all coming on. Here’s a recipe for Cucumber Salsa that combines the bounty from my garden with nutritious Thrive food, saving me time and money. This can be eaten as a snack or appetizer with chips, crackers, etc. or used as a side salad.

Cucumber Salsa NutritionSalsa Ingredients:
2 cups Cucumber, peeled, seeded and finely chopped
1/2 cup Thrive FD Tomato Dices (#22241) (or fresh from your garden if you have them)
1/4 cup Thrive FD Onion (#22227)
1/4 cup Thrive FD Green Chili Peppers (#22242)
1 Tablespoon Thrive FD Parsley (#23621)
1 Tablespoon chopped Jalapeno Pepper or 1 fresh pepper chopped
2 teaspoons Thrive FD Cilantro (#23622)
1 garlic clove, minced or pressed

Dressing Ingredients:
1/4 cup Thrive Sour Cream (#22449), reconstituted
1/4 teaspoon Thrive Lemonade Crystals (22899) (or 1 1/2 teaspoons Lemon Juice)
1 1/2 teaspoons Lime Juice
1 mini scoop Stevia Powder, sweeten to taste
1/4 teaspoon Ground Cumin
1/4 teaspoon Thrive Chef’s Choice Seasoning Blend (#23628)
1/2 teaspoon Dill Weed, optional

Cucumber SalsaDirections:

Mix salsa ingredients in a mixing bowl. (Thrive ingredients are right out of the can – they will reconstitute when mixed with the dressing.). Combine dressing ingredients in a small bowl and mix well. Pour over vegetable mixture and gently combine, making sure all veggies are coated. Let it sit for 10 minutes or more for FD vegetables to reconstitute and flavors to blend.

Can be served with chips, crackers or as a side salad. Serves 8
